The History of Sushi

Sushi has been made in Japan sense ancient times. There are 
references to sushi dating back to Heian period (794-1185).The 
concept of sushi was used to preserve fish. The fish was pickled 
with salt and rice. The rice was used for fermentation and was 
discarded later.

The Sushi we know today was developed in the Edo period 
(1700), this is when vinegared rice was used for the first time in 
the presentation. Expensive foods were forbidden during the 
Tempo Reformation A.D.  Inexpensive food wrapped in nori 
(seaweed) with vinegared rice became popular. Because Japan 
is an island nation Seafood became the usual item that is placed 
on sushi.
